Ecuador is one of the most important names in fine chocolate, thanks to its native Nacional bean and the celebrated “Arriba” flavour — a distinctive floral, jasmine-and-spice aroma found nowhere else. It is also the epicentre of modern rare cacao, from Amazonian discoveries to heirloom white-bean varieties. Classic Ecuadorian chocolate is floral and nutty with a deep, almost savoury cocoa intensity; some lots lean into bright fruit.
