The Philippines is a small, fast-emerging cacao origin with a proud homegrown chocolate culture — the traditional “tablea” drinking-chocolate tablets. Cacao grows across Mindanao (especially Davao) and other islands, largely Trinitario. A new generation of Filipino bean-to-bar makers has sharpened quality dramatically, and the beans can be lovely: warm brown-fruit, dried banana, mild spice and a soft, nutty cocoa base, often gentle enough to be very approachable. For UK buyers, a single-origin Filipino bar is an off-the-map find — distinctive without being challenging — and a way to support a young, largely smallholder industry. Look for makers who name the Davao farm or co-operative for the clearest provenance.
