Indigenous farmers on the island of Guadalcanal cultivate cacao as part of an agroforestry system, growing it alongside native coconut trees, tropical fruit trees, and other crops. This mixed approach allows for greater biodiversity and more sustainable farming practices, making full use of the island’s tropical climate and rich volcanic soil. But what makes this cacao truly special isn’t just the land; it’s the people. These island farmers continue to adapt and thrive through adversity, utilising sustainable farming practices to ensure that their cacao remains both exceptional and environmentally responsible.
This hot chocolate is a true reflection of the rich, complex flavours that Guadalcanal’s cacao offers. We carefully roast, crack and winnow the beans here at our kitchen in Bristol, before we stone grind the nibs with coconut sugar and cocoa butter. Finally, we temper and finally blend into hot chocolate powder.
In the cup, there’s a delicious flavour profile of toffee, maple, and fudge.
Place 2-3 tablespoons of drinking chocolate in a mug, gradually stir in 200ml of hot milk, froth and enjoy!
