Chuncho cacao, grown in Peru’s Sacred Valley near Cusco and Machu Picchu, is famous for the richness and complexity of its flavours and aromas. It is generally characterised by a sweet, fruity and floral pulp, accompanied by a slight bitterness. Chuncho beans are much smaller than other varieties, and so to stay warm during colder rainforest nights they develop an extra layer of cocoa butter fat which makes this ritual cacao that bit more aromatic.
Years ago, this rare genetic varietal was at risk of disappearing due to the increasing number of abandoned farms. However, a group of farmers saved these trees from being lost forever, and now more than 150 families are actively growing this unique cacao with its incredibly complex flavours at high altitudes.
Once we’ve hand sorted the beans here at our kitchen in Bristol, we carefully roast them, before cracking and winnowing them. After this, we then stone-grind the nibs with coconut sugar and cocoa butter before we temper and finally blend into a hot chocolate powder.
In the cup, you’ll find floral tasting notes of lychee and biscuit.
Add the desirable amount (we recommend 20-30g) and a small amount of your liquid to a pan and start to heat gently on the stove. Whisk into a paste & gradually stir in the rest of your ingredients. Don’t let the mixture boil. Serve and enjoy nature’s gift.
